The Nutella Cake

So the other day I did the ‘4 cakes in 6 hours’. And the nutella cake was oh delicious. No joke. My little brother, Arji is still yumming it up, i lie, its all gone now, well most of it and WARNING: the cake Lasts 2-3 days tops! Feedback:  the cake wasnt as light as I had planned. I reckon that was from wacking the air out of it (hmm Jenny!) I mean we did cream the butter and sugar until it was all light and fluffy BUT I do remember adding the coffee after the flour which must’ve messed it up. Oh well, Arji’s already put in his birthday cake order and his birthdays in DECEMBER. So I’m guessing that is a thumbs up. The idea of this cake if based on my Humingbird hazelnut and chocolate cupcakes-just saying,TRY THEIR RECIPES!

Okay so let’s start with the ingredients…

  • 200g (ROOM TEMPERATURE) Butter
  • 200g Caster Sugar
  • 2 (Free Range!)Eggs
  • 2 tbsp Milk (semi-skimmed or skimmed, whichever you have)
  • 1/2 tsp instant Coffee in 6 tbsp of boiling water (chilled)
  • ½ tsp Vanilla
  • 150g Self raising Flour
  • 50g Cocoa powder

Like you always do, cream the Sugar and butter for five minutes, can be done on an electric mixer or hand mixer or if you want muscly arms then woop woop, get yo exercise on!

Once the butter mixture is proper pale and fluffy, almost like fresh made butter then I added the eggs one at a time. And beat the hell out of it until thicker, fluffier and fi-i-ine. (five minute on high beat). I would add the coffee & milk NOW! Just before the eggs.

Sift and fold the flour an cocoa powder in one spoonful at a time. REMEMBER you fold in the flour with a metal spoon or spatula NOT A WOODEN SOON. This is when I added the coffee and milk…I know, wrong time!

Pour into a greased and floured 2lbs loaf tin. And I shoved it in a 170ᵒc preheated oven for 40 mins or until you stick a toothpick in the centre and comes out clean.

The frosting

  • 250g Icing Sugar
  • 80g ROOM TEMERATURE butter
  • 1 big fat tbsp. of Nutella
  • 2 tbsp. milk

So I always mix the butter and add bit by bit of the icing sugar so it doesn’t make a mess and add the Nutella in and whisk! Whisk it real GOOD!

Wait for the cake to cool down for like 1-2 hours. Just make sure it its col and NOT warm not even slight! Trust me you don’t want to go there.  First spread a thinish layer of Nutella over the bare cake. Trust me on this!

BUT that butter cream on…and remember ‘the mo’ butter the mo’ better’.

You can it on all perty or if you best piping bag burst like mine did… just slab it on and make fork patterns .

The final result come to a cake looking like a BEAST yeah!



So I was told by the  lovely Ina Garten through a TV screen to add coffee to chocolate when cooking and it brings out the chocolate flavour. And d’you know what? IT WORKS. I have always done it since, and I’ll tell you what, you will lick that bowl EVERY TIME, guaranteed! BUT I guess I HAVE to add it in before the flour.

I have to admit, the cake was a little not as light and spongy and more crumblier. Which I know isn’t that nice BUT the frosting helped.

4 Cakes in 6 Hours.

Another baking session I’m afraid. But since it was with Jenny it’s not the typical pretty cakes, just plain weird with her. So on Saturday Jenny stayed over for the weekend after meeting up for a picnic in Hyde Park with Jemma, Jenny, Ajay and Arji. Was actually a lot of fun! It was a lovely weekend with Jen, our serious talks in the garden with the chiminea smoke permanently blinding us. We had a laugh. So whilst Jenny was here she wanted to bake cakes. Now this was serious; since Jenny is the sort to claim she baked a cake when clearly all she did was add an egg and a few drops of water and bung it in the oven. Ta-Dah, Jenny’s homemade marble cake! So I gave her the basic recipes for sponges, to try at home.
Now I am not exaggerating here, it took us 6 HOURS. Really and that wasn’t decorating them like I did with Nicola. And by the end of it, I think it was safe to say Jenny and I was not ready to see another block of butter for a while. I have to admit we didn’t get hungry once whilst baking, and we didn’t even need to mindlessly nibble on a slice of cake throughout. So thumbs up on the diet side. BUT a BIG thumbs down on the whole weekend, food wise. I have to admit I still use the recipes from school and that was like 2 years ago. But I guess Mrs Abbotts would be proud. So the sandwich cake turned out lovely! As for the others…about that. (Look at the pictures, and then you’ll understand)

McDonalds Cake

so we started off making a sandwich cake, which turned out to be Jenny’s results cake. Now you’re probably thinking, “what is that?” Well Jenny has only just turned 17 and is doing A-Levels, so she has just finished the first year (A S Level) and gets the results this THURSDAY, so i made her and her friends a cake for when they go out for a meal to celebrate “all their hard work throughout the year, gone down the drain”; Jenny’s words not mine!

ugh now this looks like a disaster but tastes not bad. Jenny made out like she was having here order taken by me and i’m offering her the cakes i make. But this was a Humingbird recipe of all choc-o-late. But i don’t know to me doesn’t look all that chocolatey.

These were pretty cute if only they had a clean finish. for some reason they remind me of truffles, no? Jenny piped these on so that will be my excuse for looking so ‘rough’.

Nutella Cake

so this was the last of the cakes. i can’t remember why, but  was CRAVING Nutella. so with a simple chocolate cake and Nutella frosting, you get this creature. this was purely just me being me and awkward wanting to add another cake to the mix.

i don’t know why but i feel like it looks like a beast in these pictures, but i am serious it is nice!!

So i don’t know what you make of these ‘cakes’ but i will tell you this, it was fun. besides the constant mess which jenny kept cleaning up, so thank you Jenny, i did notice !

The Repugnant Raspberry Ripple Cake

Now I told y’all i’m not a professional and my work don’t always turn out right. And this is my first example: the Raspberry ripple cake. let me explain to you my initial idea:

A lovely pink and vanilla sponge, marbled in a loaf tin shape. Nice chunks of raspberries plonked in through out the sponge, like you get with chocolate and raspberry brownies. BUT NO! instead it turns out disastrous. The cake was like a mushy pile of s***.

Let’s see where i went wrong…


  • 200g granulated sugar
  • 200g olive oil Margarine
  • 180g Self-Raising Flour
  • 2 eggs
  • 1/2 tsp Vanilla extract
  • 1/4 tsp Almond essence
  • 150g whole Raspberries, crushed with a fork
  • tooth pick drop of concentrated ‘Dusky Pink’ Food Colouring Paste
  1. cream the margarine and sugar until palish (30 seconds)
  2. Add the eggs and beat in for couple of seconds until all combined
  3. Add spoonfuls of flour, bit by bit folding in the flour into the egg batter. Once all combined separate equal amount into separate bowls.
  4. Add the ‘crushed raspberries’ into one bowl with along with the food colouring.
  5. In the other add the vanilla and almond extract
  6. pour both mixture in spoonful by spoonful in a 2lbs loaf tin, layering and then marbling like you would with the marble cake.
  7. bake in he oven for 45 minutes and viola, disaster fresh out of the oven.

I don’t even need to explain what went wrong. i think you can make this out on your own. Like for starters, i know your probably wanting to scream at your poor little screens to me, “why would you use olive oil margarine?” “your part measurements are wrong!” so yeah the thought of what went through my head as i was creating the disaster. hmm. well the olive oil margarine thing was healthy, no? it wasn’t until recently i was told you never use granulated sugar because it makes the cakes crumbly and makes the top layer of the cake crispy; like rock solid. but i guess i was lazy ad couldn’t be bothered to run down to the corer shop and pick up some caster sugar. I KNOW MY FAULT!

So the real reason why i made this cake was because my brothers come back from my uncle’s, who’s currently staying in the north of Wales. so to show them how much i missed them, and being bored as an only child in the house for the week. i thought i’d make ’em a cake for when they come back to show how much i missed them buggers. INSTEAD it goes downhill  like everything does. it was mushy, stodgy, extra sweet. Basically all the wrong stuff you don’t want hear about a cake was THIS cake.

I Reckon the stodginess come from the raspberries (you don’t say Sherlock). i think because I ‘crushed’ them it affected the batter in a wrong way. and then the SUGAR was too much. i really think i have a to work out the proportions for each ingredient. I think i should of really added 225g of flour because the raspberries made the m too moist. haa innuendo there!

So I will re-do this gross cake again and see how i improved. please feel free to give me any tips or comments.

1st Day Living HEALTHY!

Right, so most of the day i went really really healthy. The diet was to start yesterday (Monday) BUT thats another story… anywho, so what i ate today:


  •  cup of Tea, milk and 2 sugars

I literally forgot to have breakfast. I know what your thinking, [GASP] “breakfast is the most important meal of the day”. But seriously I just forgot. But to be honest i didn’t even get hungry all morning since work actually kept me occupied for the morning! i think thats kind of what you need is to keep busy during the day so you don’t pick at stuff like me and Aimee do.


  • Panfried Chicken breast with cajun seasoning a
  • seasoned quinoa
  • simple salad on the side

So i was very happy with my lunch. sat outside on the tables in the sun, well-ish- british weather ay? my highlight was the quinoa. i don’t know what mum put in the seasoning but it was de-lic-ious! i shall give the recipe for my lunch later!


  • Clippo Ice lolly
  • Wispa choc bar
  • Nectarine
  • Plum

This is where i go wrong. the nick nacks. the clippo was because of the sun. seriously its like when the sun comes out, me and Aimee are like mind readers and just know that we both crave an ice lolly! the Wispa bar was really naughty and i know. it was all in the heat of the moment and there was nothing in the fridge to eat. nectarine and plum, come on you know thats good.  woop woop!

Now lets get down to business…


  • running for 16 minutes
  • powerish walking for 35minutes

so as you know i work in the local college. i know odd but hey ho. Its like a 5 minute drive in the car yet takes 35-40 minutes walking up hilly roads. so it is pretty good exercise i guess and i do this at least once a day (to work) but may get a lift back. After work me, Aimee and Nicole went to the gym like good girls but i only to do my run. well its kind of like i jog for 1 min 50 secs on 6 & the run 1min 50secs on 9 and then when when you get to the last 2minutes RUN on like 10 and then 12. That is when i feel the sweat like seriously i know i only ran for 16 minutes BUT i have started to wear these shorts which are like scuba diving shorts mum brought me but there meant to work your muscles more or something. I don’t know but all i can say is once i took them off i was sweating like mad.

So overall as the first i feel i did not-bad. A bit disappointed with the chocolate and ice lolly but i am pleased that i went to the gym after. i guess i have to sort of take baby steps. so lets see how the rest of the week goes and i shall keep up with the updates!

My Marketing Strategy

Thought Id post up my way of advertising Larrdarse. The story behind this was: i went to meet my Cousin Jessie at her work place (she’s a makeup artist for Benefit, which i take advantage of at times or shall i say  will do) and we went into the apple store for Jemma (Jessie’s younger sister and my best friend!). The dope some how managed to get the headphone cable thingy stuck in the hole (not sure if you understood that?). As she waited in the queue for the Genius Bar, I, like everyone else does when they’re in the apple store, decided to go on every device i could get my hands on and open the internet and went on the blog… hope this has helped with the views!advert

Snazzy Cupcakes with Nicola

So Nicola and i have planned this ‘Baking sesh’ for MONTHS and when i mean months i mean a year and a half!  so on Thursday, straight after work (leaving 15 minutes earlier and feeling like the biggest rebel ever) i met Nic at Sainsbury’s to do a quick shop and went straight to hers to get our baking Groove on. We decided on a simple vanilla cupcake but wanted to focus on the decorating. since doing the level 1 cake course nic though i could teach a few (which was kind of a flop) but hey i can say it looked pertty damn good. sorry i have literally come back from staying at my aunts for the weekend and have been watching ‘Here comes Honey Boo Boo’, with Jenny, so i’ve kinda been talking like that. Anyway getting back to the story we made some lovely Humingbird Recipe cupcakes. honestly i can say everything turned out right. but the downfall was hat it actually took us three hours to create these so we were impressed and exhausted. so as you can see we actually made an effort to pipe out, h i absolutely loved Nic’s piping bag is amazing! from Lakeland.  And then topped off with fondant.

for some weird reason this one just reminded me of Marc Jacobs, Daisy. no? you can say its a designer cake.
